lavoro nella cantina <strong>Palazzo Battaglini<\/strong> incomincia sempre in vigna, ascoltando la naturale maturazione fenologica delle uve. Fra Agosto e Settembre ha inizio la vendemmia, rigorosamente manuale; i filari vengono ripassati pi\u00f9 volte per raccogliere l\u2019acino nel momento migliore e poi portati in meno di un\u2019ora in cantina, dove inizia il processo di vinificazione.<\/p><p>Per i <strong>bianchi<\/strong> si utilizza una tecnica all\u2019avanguardia, quella del raffreddamento delle uve appena raccolte con ghiaccio secco (CO2), al fine di preservare i <strong>sentori primari<\/strong> legati al vitigno di partenza. Dopo il raffreddamento le uve vengono pressate sempre in ambiente controllato e in assenza di ossigeno.<\/p><p>La <strong>vinificazione in rosso<\/strong> segue, invece, i metodi pi\u00f9 tradizionali. La maturazione del Montepulciano, \u00e8 lunga e la vendemmia pu\u00f2 prolungarsi anche fino a Novembre.<\/p>\t\t\t\t\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t<div class=\"elementor-element elementor-element-73e2437 e-con-full e-flex e-con e-child\" data-id=\"73e2437\" data-element_type=\"container\">\n\t\t<div class=\"elementor-element elementor-element-76c7d6c e-con-full e-flex e-con e-child\" data-id=\"76c7d6c\" data-element_type=\"container\">\n\t\t\t\t<div class=\"elementor-element elementor-element-261a784 elementor-widget elementor-widget-heading\" data-id=\"261a784\" data-element_type=\"widget\" data-widget_type=\"heading.default\">\n\t\t\t\t<div class=\"elementor-widget-container\">\n\t\t\t\t\t<h2 class=\"elementor-heading-title elementor-size-default\">Cos\u00ec nasce un vino unico<\/h2>\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t<div class=\"elementor-element elementor-element-ba0431d elementor-widget elementor-widget-text-editor\" data-id=\"ba0431d\" data-element_type=\"widget\" data-widget_type=\"text-editor.default\">\n\t\t\t\t<div class=\"elementor-widget-container\">\n\t\t\t\t\t\t\t\t\t<p>Dopo la raccolta e la pressatura ha inizio la macerazione del mosto a contatto con le bucce; la fermentazione prosegue attraverso <strong>tecniche di rimescolamento<\/strong> del mosto non invasive, che prevedono rimontaggi all\u2019aria, follatura e delestage. Il vino ottenuto, comincia l\u2019affinamento in legno, una parte in botte grande da 25 hl e una parte in barrique.<\/p><p>La <strong>microbiologia<\/strong> di un\u2019area ha caratteristiche specifiche ed \u00e8 attraverso un nuovo approccio alla fermentazione che \u00e8 possibile sfruttare appieno i lieviti autoctoni per ottenere vini tipici al 100% e legati in toto al vigneto e al terrotorio di appartenenza.<\/p><p>Per questo motivo la cantina <strong>Palazzo Battaglini<\/strong> ha avviato sin dall\u2019inizio la selezione dei <strong>propri lieviti<\/strong> direttamente in vigna e ne cura il loro sviluppo in colture fresche che garantiscono da un lato la correttezza e la ripetibilit\u00e0 del <strong>processo di vinificazione<\/strong>, dall\u2019altro la massima tipicit\u00e0 del prodotto finale, preservando la biodiversit\u00e0 e regalando ai vini caratteristiche organolettiche uniche e specifiche.<\/p>\t\t\t\t\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t<div class=\"elementor-element elementor-element-3524755 e-con-full e-flex e-con e-child\" data-id=\"3524755\" data-element_type=\"container\" data-settings=\"{&quot;background_background&quot;:&quot;classic&quot;}\">\n\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t<\/div>","protected":false},"excerpt":{"rendered":"<p>I buoni frutti del sapere il gusto inimitabile della professionalit\u00e0 Tradizione e Innovazione Il lavoro nella cantina Palazzo Battaglini incomincia sempre in vigna, ascoltando la naturale maturazione fenologica delle uve.
